Diabetic Recipe- Rice&Broccoli Casserole

Ingredients:1 tablespoon vegetable oil 1 cup chopped onions 1 pound fresh or frozen broccoli pieces 1 can cream of mushroom soup 1/4 cup skim milk 1 cup cooked rice 2 tablespoons grated Parmesan cheese
Instructions:Preheat oven to 350 degrees. Pour oil in a saucepan and bring to frying temperature. Add onions to saucepan. Cook over medium heat until soft, stirring frequently. Mix in the broccoli and cook until hot but not cooked. Mix soup and milk together and then add to saucepan. Mix in the rice and continue cooking over low heat. Place in a 2-quart casserole dish that has been greased with margarine. Sprinkle Parmesan over the top and bake for 35 to 40 minutes. A delicious low carb recipe.
